Mmmmm… pineapple stuffing.

One of our favorite side dishes when I make ham for dinner is Ms. Lise’s Pineapple Stuffing. Lise is one of my closest friends and a fantastic cook and her pineapple stuffing is so simple and absolutely delicious.
I am sure it would go well with many other meats as well, but there is just something so perfect about this stuffing with a great honey ham. Mmmmmmm…

Ms. Lise’s Pineapple Stuffing

I find using my mixer makes this super easy.
You want to start out with 1 stick of butter at room temperature.

Cream the butter together with 1 cup of sugar.

You’ll need 4 large eggs

Mix the eggs together well with the sugar and butter.

Add 2 20oz cans of crushed pineapple, drained.
Mix well.

Cut 8 slices of wheat bread into cubes and add it to the mixture.

Mix well and pour in a greased 13×9 pan.
Place into a preheated 350 degree oven for 1 hour.

The edges should be slightly browned when finished.
Serve warm.
