from Dirt to Dinner ~ Strawberry French Toast

When I first heard that the food of choice for Dirt to Dinner was strawberries, I just KNEW I wanted to post some recipe. Any recipe.

I LOVE strawberries!
They are my favorite fruit and every year we not only grow a whole bunch of them, but my family consumes tons and tons of the fresh goodness 🙂
One of our favorite meals in our home is breakfast, so I thought I would try a variation on one of my “speciality” breakfasts: Overnight French Toast
So, I made yummy berry overnight french toast and it was…. delicious!
Double Berry French Toast
1 loaf of berry bread, mine was blueberry (bought from the local bakery because I didn’t have time to bake my own loaf)
1/2 cup butter or 1 stick
2 TBS Golden Syrup (could use any type of syrup here)
1 cup brown sugar
8 eggs
2 cups milk
1 tsp. vanilla
1/4 tsp salt
fresh sliced strawberries
Start by adding the butter, brown sugar & syrup to a saucepan on medium heat.

Stir together until fully melted and the mixture thickens.
Try not to allow it to boil or it will become toffee.

Pour into a 13X9 in pan.

Top the syrup with an even layer of bread.

Top the bread with an even layer of sliced strawberries.

Place a layer of bread over the strawberries.
In a mixing bowl, whisk together the milk, eggs, salt and vanilla.

Pour this over the bread evenly.

Top with tinfoil and place the french toast in the refrigerator overnight to allow the bread to absorb the eggs.
In the morning, preheat the oven to 350 degrees. Remove the foil and bake for 50 minutes.

Slice and serve immediately.

I usually serve it upside down so that the caramelized syrup it visible on the top (YUM!)
Top with fresh berries.
