Cream first four ingredients together.
Add eggs to mixture, one at a time.
In separate bowl, mix together flour, baking soda, baking powder and salt.
Add dry mixture to shortening mixture.
Add oatmeal and coconut.
Drop by packed teaspoon onto parchment covered cookie sheet, 2 inches apart.
Bake in pre-heated 375 degree oven for 10 minutes until edges are slightly browned.
Remove to wire rack and allow to cool.
