Crispy Natural Oven Baked Chicken

A LONG while back I made the decision to have our family switch
to eating a natural diet (not to be confused with an organic).

While I would love to say that we have stuck to it awesomely,
the truth is, sometimes a gal just wants to eat an Oreo and drink a diet Coke.
(Can I get an amen?)
However, I do try to avoid cooking pre-packaged foods aside from snacks
and generally make every meal from scratch.
And that makes our meals:
A. Healthier
B. More affordable
C. Delicious

A long-time family favorite recipe:

Natural Crispy Chicken

You need to start with 5lbs* of chicken breast tenders. Thaw completely.
(the kids like when I cut them into bite-size pieces, but last night I was feeling lazy…)

2 cups corn flakes*, crushed.

* Since we are following a natural diet, I did not use Corn Flakes brand cereal as they contain High Fructose Corn Syrup. Instead, I used a similar organic brand and ground them up in my blender.

1/2 tsp paprika
1/4 tsp garlic salt or powder
1/4 tsp onion powder
1/4 tsp black pepper

Add the seasonings to the crumb mixture & mix together until thoroughly blended

Pour some milk into a deep bowl (apx 2 cups) and dip chicken into milk

Place chicken into crumb mixture and coat thoroughly

Place in baking pan that has been greased. I covered my pan with tin foil and then used 2 TBS of extra virgin olive oil to grease the pan.

Place chicken into preheated 400 degree oven for 20 minutes

*Although every last bite of the 5lbs of chicken was eaten by my family, if a family of four makes this recipe, you will have lots of chicken for freezing and reheating. Simply store in gallon size freezer bags for up to 3 months and re-heat as needed.

When you finish baking them, does the bottom of the chicken get soft or soggy?

Hi. I have never had that issue.
They seem to remain crispy on both top and bottom. (I do always line my pans with parchment paper, so maybe that helps)
